Cashew Cream Eggs Recipe - Vegan, Healthy and Refined Sugar-Free

    After trying out a live poll on facebook yesterday most of the 5'000 people that reacted choose vegan cadbury cream egg as a recipe. So here it is! Was a busy day but it worked out better than expected. Luckily I did another recipe yesterday, and while that didn't turn out as well as I hoped it was a good learning experience for this one.

    They look so good! Can you make them with macadamia nuts instead of cashews?

    Yep, they will work great with macadamia nuts. Also will work with sunflower seeds if you want it nut free, but will have that earthier sunflower seed taste.

    Just to repeat a few common questions I've had:

    • You can use nut butter in place of the whole cashews, just half the coconut oil and mix by hand as no need to blend.
    • Any sweetener will work for this, but you may have to adjust the water amount depending on if its a dry or wet sweetener.
    • I used Raw cashews, but cooked ones will work if you prefer the taste. But for health reasons I prefer the raw ones and in this recipe they work great.
    • They are slightly more calorific than Cadburys cream eggs for the same size egg. But these are full of nutrition, protein and heart-healthy fats compared to the traditional fondant eggs that are empty calories.

    This recipe looks so good, I often watch these videos just as porn but will have to make this one. I know I have some egg shapes somewhere..

    If you don't have an egg mould just use an ice cube tray, ok they won't be round. But you can get the vegan cashew yolk in there and they will still taste amazing :)
